Riverhill Farm to Table Dinner- Behind the scenes
I love showing the photos from behind the scenes of a big event….I find the focus, the creativity, the mess and everything else that goes into presenting a beautiful dinner to be just as interesting as the finished product.
Here is the menu from the dinner:

to begin…….
roasted garlic and anchovy compote
green garlic and cheve cream cheese
trio of pestos:
genoa: riverhill basil and green garlic, romano cheese, olive oil
kale: riverhill kale, pecans, garlic, nutmeg, lemon zest, parmesan cheese, olive oil
nettle: soil sisters wild nettles, toasted walnuts, roasted garlic, romano, olive oil
selection of peasant breads
soup……..
riverhill broccoli and aged cheddar soup with lemon star larder creme fraiche, garlic rubbed crostini
rainbow of salads………
red: watermelon salad with riverhill arugula, shaved parmesan, cracked pepper tossed with a champagne vinaigrette
orange: mountain bounty carrots, shredded and tossed with toasted seeds, mint and tarragon in a honey, lemon vinaigrette
yellow: mountain bounty summer squash with dinner bell mizuna, basil, mint and bulgarian feta with toasted pine nuts in a dijon vinaigrette
green: riverhill fennel and cabbage slaw with golden raisins, toasted slivered almonds in a roasted garlicky buttermilk dressing
entree…….
trout en papillote with green garlic confit, lemon and lime zest, riverhill rosemary, thyme, parsley, oregano, shallots
lundberg wild rice with roasted whole california almonds, salted pistachios, roasted cashews, fresh herbs and sun dried cherries
seared riverhill raddichio with sweet balsamic reduction
bowls of lightly dressed riverhill arugula served table side
dessert………
riverhill strawberry mousse with riverhill lavender whipped cream
